ADVENT CALENDAR, DOOR 20. (orange gingerbread cookies & light mulled wine)

Today’s advent calendar door reveals a delightful, festive treat recipe. Perfect for adding sweetness to your holiday table. Let’s get baking!

Gingerbread dough recipe:

1tsp Ground ginger
2tsp cinnamon
2tsp Ground Clove
1tsp Cardamom
1tsp Orange peel
A pinch salt
1.5 dl/0,63 cups syrup
200g sugar
250g butter
2 eggs
All spices can also be replaced with just gingerbread spice mix (2 tbsp)

In a saucepan, combine butter, sugar, syrup, and spices (or just gingerbread spice). Heat the mixture over low heat and add the zest of one orange. You can optionally add orange extract for extra flavor. It’s a matter of taste whether the dough needs it or not. Heat the mixture until it’s smooth. Let it cool to room temperature and then add 2 eggs. Add baking soda to the flour mixture. Add these to the mixture and blend the dough until smooth. Wrap the finished dough in plastic wrap and refrigerate overnight.
The next day, you can prepare gingerbread cookies from the dough as shown in the video (or use your own cookie cutters if you prefer).

Cinnamon syrup for light mulled wine:

2dl/0,85 cups water
1dl/0,42 cups coconut sugar
1dl/0,42 cups erythritol
2 cinnamon sticks
1/2 tsp Ceylon cinnamon

Measure the ingredients into the saucepan. Bring the mixture to a boil, then reduce the heat and let it simmer. Simmer the mixture for about 10 minutes until it thickens slightly. Add the prepared cinnamon syrup to the apple juice in a glass. Enjoy!
