ADVENT CALENDAR, DOOR 22. (Healthy chocolates)

In today’s door, another treat recipe video from the ”Cake Monster” (this time a healthy one).

These treats have been made using chocolate sweetened with e.g.xylitol and pistachio butter, which contains 100% nuts. A healthy caramel is made from date paste. These treats can be enjoyed with a clear conscience, even during Christmas.

Healthy chocolates

200g xylitol chocolate

3-4 tbsp pistachio butter

Preparation:

Melt and temper the chocolate. Take a chocolate mold. Fill the cavities with chocolate and pour the excess chocolate back into the bowl. Place the mold in the fridge or freezer for 2 minutes to allow the chocolate layer to set. Add nut butter to the cavities on top of the chocolate layer. Finally, cover the cavities with chocolate and place the mold back in the fridge to set for 2 minutes. Tempered chocolate will also set at room temperature.

Healthy truffles

200g date paste

75g tiger nut flour

2 tbsp water

2 tbsp cocoa powder

Preparation

Add water and tiger nut flour to the date paste. (If the date paste is too firm, you can soften it in the microwave.) Mix the mixture until smooth and roll it into balls. Finally, roll the balls in cocoa powder (or, if you prefer, coconut flakes). Since dates are naturally sweet, there’s no need for additional sugar.

Healthy chocolate bars

Base:
1 tbsp tiger nut flour
2.5 dl peanut butter
2 tbsp maple syrup

Caramel:
Approx. 200g date paste
1/2 tsp vanilla extract
1 tbsp coconut oil

Icing:
150g xylitol chocolate

Preparation

In a bowl, mix smooth peanut butter. Add tiger nut flour and maple syrup. Mix into a smooth consistency. Spread the mixture onto parchment paper (approximately 15x20cm).

Caramel:

Mix the caramel ingredients into a smooth paste. The mixture may be slightly sticky, so you can roll it between parchment paper to create an even layer. Place the sheet in the refrigerator to set. It’s advisable to tidy up the edges. Then place the sheet on top of the base. Sprinkle with chopped nuts or almond flakes on top.

Icing:

Melt sugar-free chocolate and spread it evenly on top. Sprinkle additional chopped nuts on top for decoration.
